milen Posted July 15 Share Posted July 15 Here is my favorite way to use freeze-dried apples in cooking: I really love apple pie and when I tried to add freeze-dried apples instead of regular ones, it turned out to be very tasty, the taste does not change much but there are some unusual notes of apples and it is very tasty. Lovers of apple preserves and freeze-dried products will love this. Here is the recipe, I make the dough myself but you can use any of your own: Ingredients: For the test: 200 g flour 100 g butter (cold, cut into cubes) 1 egg 50 g sugar 1 pinch of salt 2-3 tablespoons cold water For filling: 150 g freeze-dried apples 200 ml apple juice (to regenerate freeze-dried apples) 100 g sugar 1 teaspoon cinnamon 1 tablespoon lemon juice 1 tablespoon cornstarch 1 teaspoon vanilla extract Preparation: Preparation of the dough: In a bowl, mix flour, sugar and salt. Add diced cold butter. Grind the flour and butter with your hands or using a food processor until crumbly. Add egg and cold water. Quickly knead the dough until it is smooth. If the dough is too dry, add a little more water. Form the dough into a ball, wrap it in cling film and refrigerate for 30 minutes. Preparing the filling: Place freeze-dried apples in a bowl and cover with apple juice. Leave for 10-15 minutes to recover. Cut the reconstituted apples into small pieces. In a bowl, combine chopped apples, sugar, cinnamon, lemon juice, vanilla extract and cornstarch. Mix thoroughly. Pie assembly: Preheat the oven to 180°C. Remove the dough from the refrigerator and roll it out on a floured surface to about 0.5cm thick. Place the rolled out dough into the pie pan, forming sides. Trim excess dough from edges. Spread the apple filling onto the dough, spreading it evenly. The remaining dough can be used to make a lattice or decorative elements to decorate the top of the pie. Bake the pie in the preheated oven for 40-45 minutes until the pastry is golden and the filling has thickened. That's all, it's very simple and delicious.
