After 10 days of running 24×7 and two hour defrosts we gave the FD and us a day off.
2 pts red, yellow, orange peppers

3 pts + 1/2 gal carrots
6 pts sweet potato chips
14 pts young sweet squash
4 pts bananas
This is about as hard as we have ever worked the machine. I found some really high quality food and did not want to loose any of it. It is very difficult to accomplish a two hour turn around between batches. I have to do an oil change in addition to defrost. Three hours would be better, but we had batches finishing in the middle of the night because we started batches as soon as we could. Missed sleep doing it. Every batch finished in less than 26 hours and we finish below 200 mT.
Strips with blue dots are moisture indicators we get from Uline. We put one inside every jar but they are not all visible in the photo. All blue is good. Every jar gets O2A and vacuum sealed in a VacMaster chamber vac. After two days we inspect and move them into a dark pantry that is maintained at 68F year round.
