    So one of my most requested recipes this time of year is for my Harvest Soufflé. I have not found anyone who does not like it, even if they don’t like carrots or sweet potatoes. So I thought I would share the love here, so you all could enjoy the yumminess.

    This year since I have my FD, I have also experimented with making crackers and bites with this recipe. WOW! Move over zucchini crackers, this stuff is amazing, and such a healthy snack. If you like a crunchy snack, prebake the recipe in your FD trays, then add dividers. If you like a fluffy kind of snack, omit the eggs (since we are not baking) and pipe, spoon, or use tray dividers for crackers. So far this is my favorite, and I can’t keep up with the demand from my family and friends. I’m hoping to start selling my FD items soon, and these will definitely be on the menu.

    I wish I had a picture of the Soufflé, but we must always devour it before I take a picture. Trust, just make it once and your family will be hooked.

    Notes: in experimenting with this recipe to FD, I knew I did not want eggs when not cooking the batch, but I have not experimented to see if I would get the same results without the baking powder when not baking.

    I have used less sugar, and these still came out great. I also plan to try with stevia next, for an even healthier version.

    I have also tried FD leftovers and it does well, but it did seem a little more dense in texture.

    I was blessed with an abundance of sweet potatoes and carrots. So this is pretty much all I’ll be doing this weekend.

    Harvest Soufflé/Bites/Crackers

    Creator: Kerry Hicks

    1lb Boiled Carrots

    1lb Boiled Sweet Potato (~2)

    4 eggs (cooked version only)

    1 heaping TBSP Baking Powder

    1 stick melted butter*

    *will melt if added to hot veggies

    3 TBSP vanilla

    1 Cup sugar

    2 heaping TBSP flour

    Optional additional seasoning cinnamon, nutmeg, ginger, orange zest

    Blend all ingredients together in a blender or with an immersion blender. I usually just do it in the pan I have boiled my carrots and potatoes in, after I drain off the water.

    Bake at 350° for 45 minutes or until top is not shinny.

    Top with pecans and marshmallows and lightly toast broiler

    Bake 350° for 45 minutes, a thin layer in FD trays, they will puff up,

    Don’t overbake, or you will have really hard crackers.

    Add dividers for crackers after baked.

    Pre-freeze or at least cool to room temp and run FD as normal.

    Omit eggs from ingredients

    Pipe, spoon, use dividers puree onto trays. There is no wrong way to shape these.

    Pre-freeze and run FD as normal.

    Did you say you omitted the baking powder when you don’t take it? And how long did it take to freeze dry it?

      he`s about to try a non-baked batch without the baking powder. But my 1st trial it was in there. I’m not one who knows the science behind all the baking, but I’m thinking I can leave it out if not baking it.
